Avocado, Black Bean, and Corn Salad

This is a super easy, super yummy side for anything mexican or even a great side for warm summer grilled meals.

Avocado, Black Bean, and Corn Salad


Ingredients:

2 avocados, chopped
1/2 small red onion, finely chopped
1 roma tomato, diced
1 15oz can black beans, rinsed and drained
9 oz frozen corn, thawed
1 tbsp chopped cilantro
Juice of a large lime
salt and pepper

Mix all ingredients together and let marinade at least 30 minutes.
Serve cold
